Tomato puffs
Instructions
Wash and dry the tomatoes.
With a sharp knife prick a hole in the stem, remove the seeds and, after sprinkling them with salt, turn upside down because they lose some of their water.
Meanwhile collect in a bowl the mozzarella, cut into cubes, 8 basil leaves, washed and chopped anchovy fillets into pieces.
Stir and fill with this mixture the tomatoes.
Prepare the batter for cream puffs, gradually immerse the tomatoes and FRY in plenty of hot oil.
Dry on paper towels and serve hot
