Instructions

First of all prepare a syrup with sugar and water before it becomes too dense, turn off and let cool.

Then add lemon juice and finely grated zest of at least two of them, pour into a container and put in freezer.

After about three hours, pull it out, frullatelo, or spezzettatelo, add the egg white snow mounted, do incorporate well and put in the freezer for another 30-40 minutes.
