Lemon soufflé
Instructions
In a container suitable for double boiler, mix egg yolks with 2 120 g sugar; Add the sifted flour, 2 eggs, melted butter, lemon juice.
Immerse the container in a warm water bath, turn on moderatissimo and fire, stirring, then turn the mixture creamy.
Let it cool down.
Meanwhile start to mount 5 egg whites with salt by adding pizzichino as, 80 g sugar: in the end have to be mounted in snow sodissima.
Blend cold cream, stirring gently with a wooden spoon, with movements from bottom to top and vice versa.
Generously grease a soufflé mould and smooth edges, spolverizzatelo sugar, fill it to 3/4 with the mixture, bake at 180 degrees for 45 minutes, baked and served immediately.
