Prepare a bechamel sauce by mixing the fire melted butter with flour, dilute with hot milk and cook for 10 minutes.
Combine the grated Parmesan, salt, pepper, nutmeg, egg yolks and egg whites until stiff.
Pour the mixture into a mold lined with radicchio leaves before scalded in a pan with water and oil and bake at 180 degrees already warm for 30 minutes.
