Kid stew
Instructions
Cut the meat into pieces, add salt and pepper and put it to Brown in the lard.
When it is golden brown add a little garlic and Rosemary, chopped.
Let it Brown again for 1 minute and then sprinkle with flour and add vinegar and water.
Stir well and simmer for 15 minutes.
Remove the lische to three anchovies and place them in a pan with a little of the sauce by cooking the meat and mash with a fork.
When this sauce will be thick, pour it over the meat.
Serve the whole sprinkling of chopped Rosemary.
Ingredients and dosing for 4 persons
- 1000 g of "leg of kid
- 1 tablespoon of lard
- 1/2 tablespoon of flour
- 1/2 cup of wine vinegar
- 1/2 cup of water
- 3 anchovies
- Salt
- Pepper
- Rosemary
- Garlic
