Supplì of rice
Instructions
Please find the dried mushrooms in warm water, cut the cheese into cubes.
Prepare a meat sauce with onion Sauté in saucepan, heat oil and minced meat, wet with wine and when evaporated, add the tomato paste, squeezed and chopped mushrooms and simmer for about three quarters of an hour.
Meanwhile boil the rice for 12 or 13 minutes in salted water, drain and season with butter, parmesan cheese and meat sauce passed, leaving aside the minced meat.
Shaped with seasoned rice of supplì giving them the typical egg-shaped, placing within a dice of smoked cheese and a pinch of minced meat.
Passed the supplì in beaten egg and then in bread crumbs and FRY.
Drain on absorbent kitchen paper.
Before you fry them let them rest for a few hours in the refrigerator.
Fry the supplì in a deep Fryer so that they brown evenly and without the danger of split.
Serve very hot.

- 50 g of grated parmesan cheese
- 200 g of breadcrumbs
- 1/2 cup of dry white wine
- Olive oil
- Frying oil
- Salt
- Pepper
