Tagliolini with scampi
Instructions
Clean, wash and shell the shrimps.
Boil the carcasses for a quarter of an hour in salted water with carrot, stick of celery, onion.
Strain the broth and keep it aside.
Add the shrimp in the hot oil for 3 minutes, sprinkle them with the chopped parsley and 1 teaspoon concentrated diluted with a little fish broth.
Boil the pasta and toss with the hot sauce.
Accompanying wines: Friuli Grave Pinot Bianco DOC, Verdicchio Di Matelica DOC, Pinot Bianco Castel Del Monte DOC.

- 280 g of type pasta noodles
- 400 g of scampi
- 1 teaspoon of tomato paste
- Onion
- Carrot
- 1 costa of celery
- Chopped parsley
- Olive oil
- Salt
