Tajarin with white truffles
Instructions
Put the flour on a work surface, place the egg yolks in the middle and a pinch of salt.
Mix with care and energy.
Pull the dough very thin and let it dry, but not dry.
Roll it up and cut tajarin (pasta).
Cook in salted water for a few minutes and drizzle with melted butter and Sage.
Sprinkle grated Parmesan and a rub of white truffle.
