Instructions

Scrape the outer peel of Jerusalem artichokes, wash and dry them.

Clean and peel the apples.

Slicing each other subtly.

Cut into julienne the celery sticks.

Combine all ingredients in a large bowl, drizzle with lemon juice, olive oil, salt, pepper and mix well.

If you want a stronger flavor you can add capers or mustard.
