Sand cake
Instructions
Let soften butter at room temperature, then put it in a bowl and knock it to use a whip cream.
Add the sugar and continue to mix until you have a swollen and homogeneous.
Combine egg yolks, even one at a time, making sure to incorporate well each one before adding the next.
In another bowl mix the flour, potato flour and a pinch of baking powder and add the mixture to the egg mixture and sugar by placing it in the rain.
The dough flavoured with a tablespoon of rum, a little grated lemon zest and a pinch of salt and let rest in a cool place for 30 minutes.
In a bowl Beat egg whites very firm four egg whites, blend the mixture prepared gently and pour into a buttered and floured.
Bake the cake in a preheated oven (160 degrees) for 40 minutes, then remove from pan and onto a serving dish, refrigerate and serve.

- 150 g of flour
- 150 g of potato starch
- 300 g of butter
- 4 eggs
- 1 pinch of yeast
- 300 g of sugar
- Little of zest of lemon
- 1 tablespoon of rum
- 1 pinch of salt
- Butter for the pan
- Flour for the baking pan
