Instructions

Choose small red mullet.

Clean, wash them, dry them, add salt and flour them lightly.

Scottatele high heat in very hot oil, without cooking them.

Then place them in an ovenproof dish and cover with buttered tomato sauce prepared and seasoned with a pinch of Saffron, a pinch of garlic, chopped parsley, a bit of thyme and bay leaf powdered.

Cover and place in oven for ten minutes.

Let cool and serve in the same dish.

On every triglietta put a slice of lemon and a little chopped parsley.
