Eggs with radicchio
Instructions
Peel the chicory, wash it, let it drain and coarsely tritatelo.
Make firm eggs, Peel and cut into wedges.
Prepare a sauce with olive oil, vinegar, anchovy fillets minced, salt and pepper.
Cover the bottom of a serving bowl with the radicchio and sprinkle over finely sliced onions and eggs, seasoned with the prepared sauce and serve.
Eggs with radicchio were a traditional snack of Easter picnics; they are also an excellent second in the summer months.
Ingredients and dosing for 6 persons
- 6 eggs
- 300 g of radicchio
- 1 scallion
- 2 anchovy fillets
- 1 tablespoon of wine vinegar
- Olive oil
- Salt
- Pepper
