Vermicelli with fried zucchini
Instructions
Check the courgettes, wash them carefully and dry them on absorbent paper and cut them into sticks.
In a pan, heat oil and saute garlic.
Add the courgettes which cuocerete high flame for about 7 minutes.
Soon after, add the white wine, salt and pepper and continue cooking at low heat for another 10 minutes.
Finally, add the Mint and stir.
In another Pan fry the diced mozzarella breaded and 2 times in the breadcrumbs.
Drain on absorbent paper and keep warm.
Meanwhile, scalded the vermicelli in salted water until al dente, drain and pour in a pan with Zucchini.
Add the fried mozzarella and stir quickly.
Serve immediately.

- 400 g of vermicelli type noodles
- 2 large zucchini
- 200 g of mozzarella
- Olive oil extra virgin
- 1 glass white wine
- 1 egg
- Breadcrumbs
- 1 clove of garlic
- Fresh mint
- Salt
- Pepper
