Zucchini in carpione (2)
Instructions
Cut Zucchini into sticks and fry them in oil and Sage.
After frying, drain well, arrange on a baking sheet and prepare the carpione boiling for ten minutes white wine vinegar (mixed with a little water if you want a lighter tent) with a clove of garlic, one shallot, sliced, Sage, thyme, savory, mint and salt.
Remove the herbs and pour the marinated fried Zucchini hot on again up to cover them.
Leave to marinate at least a couple of hours and serve cold.
This dish can be prepared in advance, it is better the next day.
