Put to cook with oil of the flesh together with beef fat scraps of ham; spraying meat with wine and lower the heat.
Add scents: onions, carrots and celery stalks cut into pieces, the bay leaf, some Sage leaf and a sprig of Rosemary.
Add salt, pepper, add a few glasses of water and cook slowly for about two hours.
Cut the meat into slices and serve with the gravy sifted.
