Garlic soup (Zuppa D'aglio)
Instructions
Make browned in oil garlic (properly ' undressed ' and crushed) and chilli.
To Brown, remove garlic and chilli to put aside the oil.
In a crock have bread cut into very thin slices, pour over the paprika and the olive oil, then the already hot broth and salt.
Boil for half an hour.
Just before you turn off the heat, stir in the beaten egg by pouring and stirring constantly.
Serve immediately, preferably in earthenware mugs.
Ingredients and dosing for 8 persons
- 300 g of bread slightly stale
- 3 heads of garlic
- 25 cl of olive oil extra virgin
- 300 cl of chicken broth and vegetables
- 1 whole chili
- 1 egg
- Salt
- Paprika
