Onion Soup (Zuppa di Cipolle)
Instructions
Take the sweet onions.
Cut them into fine slices.
Brown them in butter until they are golden brown and transparent.
Add the flour.
Cook 3-4 minutes.
Put the broth, salt and pepper and let simmer for 30-40 minutes.
You can serve it in 2 ways: 1.
Without cheese: place the slices of bread in the soup-tureen, pour the wine over the bread and then the onion soup (we can substitute the wine with Porto).
2.
individual dishes for guests or tureen, pour the soup and wine.
Add over slices of toasted bread and sliced cheese, trying to cover the soup with bread and cheese.
Put in hot oven for 15 minutes to Brown.

- 50 g of butter
- 1000 g of onions
- 1 tablespoon of flour
- 400 cl of broth
- To serve you:
- 2 glasses of white wine
- Some of slices bread
- Salt
- Pepper
- Some slices of gruyere cheese
