Onion soup (2) (Zuppa di Cipolle (2))
Instructions
Cut the onions into very thin slices.
In a saucepan melt the butter without letting me Cook (fundamental and very important not to paint) and add the onions.
Stir until onions begin to Brown (just barely).
Sprinkle with flour and add the broth, making sure to dissolve any lumps.
Lightly sprinkle with salt (the cheese is salty) and pepper and put a pinch of grated nutmeg.
Do boil over low heat for 20 minutes.
In small individual bowls have 2 slices of toasted bread (toasted baguette slices would be perfect), cover with grated Gruyere and fill them with the hot broth.
Just the bread will be moved up to the surface, sprinkle grated cheese again and put in hot oven to Bake until they have browned.

- 6 medium onions
- 60 g of butter
- 180 g of grated gruyere cheese
- 150 cl of broth
- 1 teaspoon of flour
- 12 slices of bread
- Salt
- Pepper
- Nutmeg
