Needlefish in tomato sauce
Instructions
Clean and without bones the needlefish that leave threads: then rest in refrigerator covered with a cloth.
In a saucepan then soften chopped garlic and onion in oil, then add the peeled tomatoes (for a second time in boiling water) deprived of seeds and chopped.
Add salt and then restrict the sauce for about 20 minutes on low heat.
After this time, add oregano and parsley and plenty of ground black pepper; then lay the garfish fillets in tomato sauce and continue cooking for about 15 minutes, turning fish and shaking the pan for the handles from time to time.
Finally, when cooked, place the fish on a serving dish and serve.

- 800 g of firm ripe tomatoes
- 1 onion
- 1 clove of garlic
- Parsley
- Oregano
- Olive oil extra virgin
