Radish soup
Instructions
Clean the radicchio, cut like a salad.
In a saucepan, heat the butter and let wither the white part of the leeks, cut into thin rings.
After 5 minutes add the radicchio, sprinkle with flour, mix well, adjust salt and pepper.
Cover with the broth and cook for an hour.
Place at the bottom of an ovenproof dish rather high-edged bread slices, sprinkle with cheese, pour the hot radish soup.
Let it bake in the oven at 200 degrees.

- 4 heads of radicchio
- 2 leeks
- 60 g of butter
- 50 g of flour
- 100 cl of broth
- 4 slices of bread rusk
- Grated cheese
- Salt
- Pepper
