Instructions

00321 ZUCCHINI ROLLS and rice INGREDIENTS 4 PERSONS 280 g, 100 g of Simmenthal Vialone, 2 large Zucchini, a sprig of thyme, a sprig of parsley, a small cucumber, 4 tablespoons oil, 1 tablespoon vinegar, salt.

Cook the rice in salted water, rinse well and allow to drain.

Wash the courgettes, thickly thinly lengthwise and scottatele for one minute in boiling salted water.

Dry with absorbent kitchen paper.

Peel a cucumber, remove the seeds and coarsely tritatelo.

In a terrinetta pour thinly shredded Meat, rice, cucumber and chopped herbs.

Mix well, then flavored with vinegar and oil.

Lay the slices of Zucchini and on each place a small spoonful of the mixture.

Press it down with your hands and wrap it up tightly in the zucchini.

Serve at pleasure with a lemon and olive oil sauce, or fresh tomato sauce.
