Vegetable salad with mullet

Rub the garlic crackers, make them soften in water and vinegar, then press them between two towels; break each cracker into four pieces, place them in a bowl and pour over a little oil.
Clean and cut all vegetables, keeping separate the different qualities; chop the basil leaves and garlic; drizzle each vegetables with the oil, vinegar and a little salt.
Arrange the vegetables in the salad bowl, on top of the pancake alternating among them; do not stir, on these put some slice of Roe.
Let rest before serving the salad for at least twenty minutes, and store it in a cool place, but not in the refrigerator.
