Parma ham with grana padano and arugula

00143 PROSCIUTTO DI PARMA with GRANA PADANO and ARUGULA SALAD INGREDIENTS for 4 PEOPLE 320 g Parma ham sliced thinly (16/18 months), 100 g rucola, Grana Padano cheese, 80 g Sun-dried tomatoes, 1 6 tablespoons balsamic vinegar, 4 Tablespoons extra virgin olive oil.
Directly on the plate you have, in corona, the slices of ham into a rose.
Located within the range of the rocket ham previously washed, dried and coarsely chopped.
Separately, in a bowl, prepare the vinaigrette with balsamic vinegar, dissolved in a water bath, balsamic vinegar and a pinch of salt.
Remove the Bowl from the water bath and add, beating with a fork, the oil getting a creamy emulsion.
Sprinkle with Parmesan Vinaigrette and garnished with slivers of Grana Padano cheese and Sun-dried tomatoes.
