Instructions

01290 SALMON CREAM FLAN of SWISS CHARD 4 PERSONS INGREDIENTS 400 g fresh salmon, 1 kg.

of beets, 5 eggs, 1 box of cream, 1 lemon, butter, salt, pepper PROCEDURE cut the sliced salmon very large and flavour with salt and pepper and lemon juice.

Cook two eggs and cut them in half.

Take big chard leaves and boiled then buttered mould lined.

Boil the rest of the spinach, drain and blend with three eggs, cream, just enough to get a cream, salt and pepper.

Pour the cream into the mold, placed over a salmon fillet, eggs and the rest of the salmon, then the cream of spinach.

Cook in the oven, Bain-Marie for about 50 minutes.

Drafted and serve accompanied with a hollandaise sauce or a white sauce.
