Instructions

VEGETABLE FLAN 01098 code: 1098 INGREDIENTS for 4/6 people: 1 kg of mixed vegetables (peppers, courgettes, aubergines); 1 boiled potato; 200 g of ricotta; 150 g grated Parmesan; 4 tablespoons of butter, 3 eggs; parsley and Basil; garlic; salt and pepper.

Cut the vegetables into small pieces.

Chop the herbs and let them dry in 60 grams of butter and add the vegetables.

Leave on the heat for about 10 minutes.

In a bowl mix the ricotta, grated cheese, crushed potatoes, eggs, three spoonfuls of breadcrumbs and seasoned with salt and pepper.

Add the vegetables and pour the mixture into a buttered rectangular pan and powdered dried breadcrumbs.

Place in a hot oven at 200 degrees for an hour and let it cool a little before serving.
