Vegetable cheese flan
Instructions
01198 TOMATO and Courgette FLAN with CHEESE ingredients: 1/2 kg.
of ripe tomatoes; 1/2 kg.
courgettes; 2 leeks; 1 onion; 4 eggs; 6 tablespoons cream; 1 sachet of emmental cheese; oregano, sugar, oil, salt, pepper.
Saute chopped onion in a little oil.
Add the sliced Zucchini and saute for a few minutes over low heat.
Zucchini puree with two eggs, three tablespoons of cream and grated cheese, just enough to get a mashed up; Add salt, pepper and keep aside.
Scalded tomatoes, Peel and chop the pulp, then gilds it with a tiny bit of olive oil, oregano, salt, pepper and a teaspoon of sugar for 15 minutes over low heat.
Saute the leeks, cut into slices in a little oil, add the tomato sauce and cook for a few minutes.
Puree the leeks with two eggs and cream, put a pinch of salt and pepper.
Pour the leek puree into a mold long anointed with oil; put the zucchini puree and finally, carefully pour zigzag mashed tomatoes.
Cook in the oven, Bain-Marie for firm (40/50 minutes).
