03531 RAVIOLI to TASTE INGREDIENTS for 4 PEOPLE: 400 g of pastry flour, 2 eggs, 1/2 glass of milk, salt.
For the filling: 2 eggs, parsley, salt, basil, 200 g sheep's milk ricotta, 50 g carrots, 50 g leeks, 50 g of grated Parmesan, nutmeg, 30 g of butter.

PROCEDURE prepare the pastry with the flour, 2 eggs, milk and salt.
Put to rest.
Meanwhile, mince the parsley and basil.
Peel carrots and leeks, cut into cubes and saute it in butter.
In a saucepan, stir together the ricotta with the two remaining eggs.
Add the vegetables, drained by the anointed remained.
Add the Parmesan, chopped herbs, salt it and a grating of nutmeg.
Roll out the pastry, crop it obtaining of squares and place in the center of each a little filling.
Close by folding in a triangle.
Cook for 5 minutes the ravioli in salted water to a boil.
Still al dente, drain and toss with melted butter flavored with nutmeg.
Travasateli in an aluminum foil paper and bake at 180° for 12 minutes.
