GARGANELLI with FRESH FAVA BEANS (blue)

GARGANELLI with FRESH BROAD BEANS 03388 INGREDIENTS for 4 PEOPLE 1 kg fresh Fava Beans; 100 g diced tomatoes; 100 g butter; a glass of dry white wine; 1 tablespoon chopped scallions; 500 g garganelli; salt and white pepper.
Boil 1 litre of salt water, dip the beans, peeled and sbollentale a few minutes.
Drain and keep aside.
Fry the shallots with wine, until such time as the latter will be reduced by 1/3, then add the diced butter and stir vigorously with a whisk to obtain a creamy sauce.
At this point add the beans and diced tomatoes and season with salt and pepper.
Boil the pasta in salted water, drain and add to the beans.
Mix well and serve immediately.
