Paglia e fieno tagliatelle pasta with ricotta

PAGLIA E FIENO TAGLIATELLE 2_03190 with RICOTTA INGREDIENTS for 4 PEOPLE 160 g tagliatelle verdi or straw and hay, 4 teaspoons of margarine, 120 g of ricotta, a few tablespoons of pasta cooking water, 4 teaspoons grated Parmesan cheese, salt, freshly ground white pepper, a pinch of nutmeg.
Boil the noodles in plenty of boiling salted water.
Meanwhile, in a bowl, mix the margarine just dissolved with the ricotta, fresh water, if necessary, a few tablespoons of Parmesan, salt, pepper and nutmeg.
Pour the hot noodles well drained, stir and serve immediately.
