Clean the spring onions, remove the green part, wash and mince finely.

Cut the smoked ham into cubes and keep them aside.

Put in a saucepan 20 g of butter, add the chopped onions and let them wither without coloring them; Add peas, cook them briefly, season with a pinch of salt and pepper, pour in a tbsp of water and cook for 10-12 minutes, at moderate fire, mixing occasionally.

Add, at the end of cooking, the cubes of smoked ham.

In a saucepan, boil water, add salt and cook the pasta.

Rather, al dente, drain, dress with remaining butter divided into pieces and cream; Add the peas and prosciutto ragù and Parmesan cheese and grated pecorino and mixed together.

Place the dough in a lightly buttered baking dish, put over hard grated smoked ricotta coarsely, mix it slightly and place the baking pan in a preheated oven at 180 degrees for 4-5 minutes.

Remove from oven, let rest a little pasta and serve.
