Macaroni salad to nice

2_03397 MACARONI SALAD NIÇOISE with INGREDIENTS for 4 PEOPLE 500 g of pasta macaroni type or tortiglioni, 500 g of cherry type tomatoes, 3 cloves garlic, 8 anchovy fillets in oil, 200 g of mozzarella, 6 sprigs basil, 2 tbsp capers in vinegar, one tablespoon of dried oregano, black olives, 8 100 g Parmesan flakes, salt and pepper.
Cook the pasta in salted water and when cooked, drain.
Wash the tomatoes, dry them and cut them into quarters; Peel the garlic and cut it into thin strips.
In a large skillet Brown the garlic in two tablespoons of olive oil, add the tomatoes, stir and continue cooking for 5 minutes over high heat and stir often.
Pour the dough into the Pan, stir well and turn off the heat; cover and let cool at room temperature for at least two hours.
When serving, drain and coarsely chop the anchovy fillets; drain and cut into thin slices mozzarella; chop the Basil and drain the capers.
Pour the cold noodles in a large bowl, add the anchovies, capers, mozzarella, oregano, basil, the rest of the olive oil and olives, stir and garnish with Parmesan cheese.
Serve at room temperature.
