Baby squid and beans stew

04558 DIMOSCARDINI and STEW BEANS INGREDIENTS for 4 PEOPLE 500 g baby squid, 200 g fresh shelled Fava Beans, 200 g of tomatoes in pieces, 1 glass of white wine, 2 shallots, 50 g olive oil, chopped parsley, salt and pepper (s.q.) In a pot with boiling salted water Cook the beans for about 10 minutes.
Then drain well and remove cuticles.
In a Pan fry the shallots and pepper with oil.
Join the baby octopus and let them stand for about 5 minutes.
Add the tomatoes and salt and the beans.
Cook for a further 20 minutes further.
Pour the stew into a bowl and sprinkle with chopped parsley.
Served hot.
