Norman soup
Instructions
INGREDIENTS for 4 PEOPLE A green cabbage, potato powdery 4 (500 g), 4 leeks (white part only), a pinch of grated nutmeg, 2 celery sticks, 200 g of ham in a single slice, 3 tablespoons chopped parsley, 200 g of fresh cream, salt, pepper.
In a saucepan bring to a boil salted water.
Wash the cabbage, immerse it in boiling water and, when it will resume boil, let it cook for 10 minutes.
Drain, let cool slightly, then cut into 4 parts.
Peel the potatoes and cut them into pieces.
Clean the leeks and the celery sticks by removing the filaments, if necessary, then slice them up into rings.
In a pan with the bottom often paid all vegetables; Add the nutmeg, 1, 5 l of water, salt and pepper.
Mix well, cover and simmer for one hour at moderate heat.
Remove the rind and chopped ham.
Mix with parsley, pepper and nutmeg.
After cooking, pour into a tureen of fresh cream, pieces of cabbage and, little by little, the vegetable soup.
Garnish the soup with ham and parsley and serve the rest aside.
Distributed in a piece of cabbage and vegetables soup and serve immediately.
