07782 UMBRINE FILLET with MUSHROOMS ingredients for 4 people 1 umbrine fillet weighing 600 g approx., 4 tablespoons of olive oil, 1 tablespoon white wine vinegar, 3 glasses of dry white wine, half a shallot, chopped 250 g butter, 1 bunch of fresh coriander, 300 g of mixed mushrooms, 1 clove of garlic, salt, cayenne pepper preparation time: 20 minutes cooking time: 35 minutes Procedure Preheat oven to 200° for filet Taliate umbrine into four pieces and let them brown skin side in 2 tablespoons of hot olive oil.
