Hare with wild mushrooms and blueberries

A09001 HARE with WILD MUSHROOMS and blueberries INGREDIENTS for 4 PEOPLE 2 saddles of Hare, 1 small onion, 1 leg of celery, 2 grains of allspice, 1 pinch of Marjoram, 1 pinch of thyme, 2 small mushrooms, 1 slice of bacon, 2 tablespoons cranberries, 1 teaspoon sugar, 1 pinch of cinnamon, pepper, salt, oil.
2 saddles of Hare, de-boned and clean by neretti and from bones.
With bones, neretti, onion, celery, allspice, marjoram, thyme, mushrooms, salt and pepper, make a sauce.
Bathed with red wine and cook for about 1 hour, when cooked pass through a sieve and degreased.
In a Saute pan with olive oil and Bacon Beagle fillets.
Meanwhile the sauce add the cranberries previously made to boil with sugar and cinnamon.
Cut the fillet into strips (one for each person) add the sauce with a little butter.
Served hot.
