Instructions

17880 STRAWBERRY BAVAROIS INGREDIENTS for 6 PERSONS 6 egg yolks, 150 g sugar, 4 dl milk, 4 sheets of isinglass, 400 g of whipped cream, 1/2 stick of vanilla, 250 g of strawberries. For the garnish: 1 basket of strawberries, 100 g of whipped cream. In a saucepan pour the milk with the vanilla, passed everything on fire and heat without bringing to the boil. In a bowl beat the egg yolks with the sugar for 15 minutes or until the mixture looks fluffy and creamy enough, then dilute with warm milk after having deprived of stick of vanilla. Place the sheets of isinglass soaked in water for 15 minutes, then carefully strizzateli, add them to the prepared cream and cook over very low heat and stirring constantly until the cream begins to thicken. Then remove from heat, let cool completely and stir the whipped cream. Clean the strawberries, pass through a food mill or blend and mix the mixture prepared earlier. Pour everything into a mold from wet pudding water and store it in the refrigerator for 4 or 5 hours. Then remove the mold from the refrigerator, immerse it in boiling water and quickly put the cake on a serving dish. Before serving garnish with strawberries and sprigs of whipped cream.
