INGREDIENTS for 4 PEOPLE 10 eggs, 100 g of spinach, 100 g of Parmesan cheese, olive oil, salt and pepper to taste, a liter of meat broth Wash spinach well, pour a little water in a saucepan and bring to a boil, Cook the spinach for a few minutes, drain them thoroughly, strizzateli and mince.
Break the eggs into a bowl, add salt and beat them lightly, add the grated cheese and stir.

In a bowl, mix spinach, stirring vigorously and add salt and pepper to taste.
