Instructions

INGREDIENTS for 4 PERSONS 800 g of potatoes, 800 g of sea salt, 2 tablespoons flour, an egg, 2 tablespoons chopped herbs (thyme, basil, Sage, Rosemary, mint, dill).

Preheat oven to 210° Peel potatoes, dry them and keep them aside.

In a salad bowl mix the herbs, salt, flour and egg white, adding a little water: you will have to obtain a homogeneous mixture.

In a large mixing bowl, pour half of the mixture of salt to coat the bottom and sides of the pot.

Sprinkle over potatoes and cover with the rest of the mixture, especially around potatoes to keep them snug.

Bake in hot oven for 45 minutes.

When serving, break the salt crust to release the potatoes and serve immediately.
