Baked lobster with cheese sauce

Wash the tomato, shave it and cut it into quarters; remove the seeds and the water and cut the flesh into cubes. Keep aside. In a saucepan with nonstick coating melt the butter, add the flour and stir vigorously with a wooden spoon; squirt with the broth, then add the grated cheese and mix thoroughly. Season with salt and pepper and nutmeg. Prepare a bed of aromatic herbs and onion on individual plates; ask yourself over scampi and nappate with the cheese sauce. Garnish with the chopped tomato and sprigs of fresh herbs.
