Albòndigas en chipotle
Instructions
Mix the beef with pork, season with salt and pepper, add the rice, egg yolks, bread and 3 mint leaves; mix well.
Form meatballs with the mixture by placing at the center of each a piece of boiled egg.
Let stand.
Heat the oil in a pan and sauté the onion; Add tomatoes, cumin and Chiles and cook stirring constantly until mixture is thick.
Add the broth and cook on low heat until the sauce will boil.
Season with salt and add the remaining mint leaves.
Put the Meatballs in the sauce and one at a time, taking care not to break them.
Cook on low heat for about an hour or until the meat is cooked.
Serve with hot tortillas.

- 450 g of minced beef
- 450 g of minced pork
- Salt
- Pepper
- 1 cup of boiled rice
- 3 egg yolks
- 1 slice of bread soaked in milk
- 6 leaves of finely chopped fresh mint
- 2 hard-boiled eggs cut into small cubes
- 2 tablespoons of olive oil
- 2 cloves of chopped garlic
- 8 roasted and chopped tomatoes
- 1 pinch of cumin powder
- 2 chopped chilies
- 2 cups of meat broth
- Tortillas
