Ricotta pudding (3)
Instructions
Pass the ricotta through a sieve, add the ground almonds, 100 g sugar, flour, lemon rind, cinnamon, rum, egg yolks, lime and whipped egg whites until stiff.
Pour the mixture into a buttered mould and bake in the oven at 190 degrees for 40 minutes.
Serve cold, sprinkled with icing sugar.

- 400 g of ricotta
- 120 g of icing sugar
- 100 g of almond
- 100 g of candied citron
- 40 g of flour
- 20 g of butter
- 3 eggs
- 1 lemon
- 1 dram of rum
- Cinnamon powder
