The zucchini caponata (2)
Instructions
Sauté with olive oil, garlic and chopped onion into cubes of Eggplant, Zucchini and celery, then add raisins softened, pine nuts, tomatoes, salt and pepper and cook for 30 minutes.
At the end add the vinegar and capers.
Ingredients and dosing for 4 persons
- 2 eggplant
- 3 zucchini
- 1 costa of celery
- 1 handful of raisins and pine nuts
- 300 g of tomato pulp
- Salt
- Pepper
- 2 tablespoons of wine vinegar
- 1 handful of capers
