Juniper-Roe Deer
Instructions
In a bowl combine the berries, sprinkle chops and thin sliced onion, sprinkle with oil and vinegar, add salt and let marinate 12 hours turning occasionally.
Spent the time, filter the marinade, and crush the berries in a mortar.
Dust the meat with the dust of Juniper.
Broil 6-7 minutes per side with brushed with marinade.
Serve on lettuce leaves.

- 4 roe deer thigh cutlets from 200 g

- 4 tablespoons of spiced apple cider vinegar
