Fried Anchovies (Alici Impanate)
Instructions
Clean the anchovies with much care and cut the gills with a pair of small scissors.
Very small specimens can be left whole and you can eat even the plugs without problems, while in larger ones should be deleted the fishbones.
Wash and dry the fish and season with salt and pepper.
Lightly sprinkle with flour, then toss them into beaten egg, then in bread crumbs, pressing lightly.
Do heat the butter and oil in a pan and friggetevi anchovies from both sides.
Remove from pan when they are well browned, tamponateli with absorbent paper towel to remove excess grease and serve immediately.
