Fried artichokes (4)
Instructions
Clean the artichokes, cut the corolla into wedges and chopped stems, wash them, put them in a saucepan, cover with boiling salted water and acidulated with lemon juice.
Put on the heat and cook for 4-5 minutes, then drain everything and reach into or into a bowl, add salt and pepper, sprinkle with oregano and garlic, sprinkled with the juice of two lemons.
Stir, cover and leave to marinate for a few hours.
Place over heat a frying pan with plenty of oil.
Drain the artichokes from marinade, toss them in the flour, then in beaten egg and salted peppered, then FRY a few at a time into the pan.
When they are golden and crisp, retire it with the paddle with holes and dry on absorbent kitchen paper.
Arrange on serving dish, garnish with lemon slices and parsley sprigs.
