Artichokes with red pepper
Instructions
Choose small artichokes, fresh and tender.
Remove the hard leaves until you get to the heart.
Cut the top and delete with a small knife any ' beards ' internal (Hay), leaving a piece (about 1 cm) shaft.
Squeeze 3 lemons, pour the juice into a bowl, add 50 cl of vinegar and put the cleaned artichokes in swimming.
Boil a pot of water with the remaining vinegar, the juice of the remaining lemon and a handful of salt.
As soon as the water boils dig artichokes; bolliteli over medium heat for 10 minutes depending on the thickness, then drain them and put them to dry.
When they are dry, put them in vases, arranged in layers alternating with bits of Chili, garlic slices and mint leaves.
Press well, cover with oil, close tightly, sterilized for 40 minutes and store in dark and dry place.
Wait 30-40 days for consuming them.
