Peel the cardi, cut the ribs into pieces of about five centimeters and eliminated all the filaments.
Boil them in salted water letting them simmer for about three quarters of an hour.
Drain well, arrange in an ovenproof dish, spread the butter on the surface in ribbons, pour half a glass of milk and cook at low heat for half an hour.
Then add half a cup of cream and let thicken for about ten minutes or so.
Withdrawn from the fire, passed on a warm serving dish, sprinkle the flan with abundant cheese and serve immediately.
