Black truffle carpaccio
Instructions
Have in raw sliced tenderloin dishes fine, sprinkle plenty of lemon juice beaten beforehand together with oil and pepper, after two or three minutes add Parmesan cheese and the truffle into slices, serve immediately.

- 400 g of beef tenderloin
- Salt
- Pepper
- 2 tablespoons of olive oil extra virgin
- 100 g of parmigiano
- 2 lemons (juice)
- 100 g of black truffles earth and washed clean or the equivalent in slices
