Carpaccio of Scamorza (2)
Instructions
You are at the center of a serving dish the scamorza thinly sliced, spread all around the cucumber cut into thin slices.
Prepare the sauce emulsifying into a bowl three tablespoons of oil with the filtered juice of half a lemon to the strainer.
Adjust salt and pepper.
Pour over the slices of cheese.
Garnish the dish with some fresh mint leaves.
Accompanying wines: Valcalepio Bianco DOC, Frascati "dry" DOC, Cirò Bianco DOC.

- 400 g of scamorza cheese
- 1 cucumber
- 1/2 lemon (juice)
- Some of leaves fresh mint
- 3 tablespoons of olive oil
- Salt
- Pepper
