Chop the Rosemary, garlic, Sage and other spices and mix with lard. Spread the meat on cutting board, spread the dough and roll it up, close it with white thread or String (produced by Decorfood Italy as the Carta Fata). Then take the < a href = "http://www.cucinare.meglio.it/carta-fata.htm" title = "Carta Fata" > Carta Fata and close like a bassoon. Tie with String and place in the oven to hot oven 200 degrees for about 30 minutes.

If you haven't < a href = "http://www.cucinare.meglio.it/carta-fata.htm" title = "Carta Fata" > Carta Fata you can put the roast in parchment paper, but the time to cook it will be doubled and the flavor will be less dense.
